Understanding The Egg

There are always a lot of questions about eggs.  They are truly one of the great wonders of nature.  We know for ourselves, that even with all of our many years of experience with organic and cage free eggs ( over 20 years, now), we always have something new to learn. On this page, we’ve tried to list the most common questions asked, but we are interested in answering any you may have, from the general; like, “How do eggs get to be different sizes?”, to the most specific, like, ” What do your chickens eat?”   If you don’t see your question answered here, please go to our contact page and send us an e-mail.  We will answer in a timely manner.

WHAT DO YOU MEAN WHEN YOU SAY YOUR EGGS ARE ORGANIC?

All of the flocks that produce our eggs are USDA Certified Organic according to USDA standards. This means our laying hens are always fed feed made from grains raised in soil without the use of chemical fertilizers and they are never sprayed with chemical or synthetic herbicides or pesticides.

WHAT DO YOU MEAN WHEN YOU USE THE TERM “PROGRESSIVE PASTURED”?

Any egg farm approved as a Progressive Pasture farm must provide enough pasture access to the laying hens, so that a minimum of 50% green vegeation is maintained in the pasture access area. The farmer is to progressively increase the area of pasture access to improve the amount of vegetation, resulting in more freedom for the hens to roam outside in a more natural and chemical free environment.

WHAT IS PATHS AND PATHS APPROVED?

PATHS is an organization that supports sustainable agriculture and outlines a way for small farmers who practice conventional farming to progress towards sutainable farming practices. Having as many farmers possible become PATHS Approved is PATHS ultimate goal.

Currently, yes, as all standard laying hen feed formulas including organic feed formulas, use soy meal as an important protein source for laying hens. However, we are looking into finding alternatives.

WHAT GUIDELINES DO YOU FOLLOW TO ASSURE YOUR EGGS ARE CAGE FREE?

DO ANY OF YOUR ORGANIC OR CAGE FREE EGGS COME FROM INDUSTRIAL SCALE, LARGE CAFO (CONFINED ANIMAL FEEDING OPERATIONS) EGG PRODUCERS?

No. This is a big difference between us and many of the well known brands of organic and cage free eggs in the marketplace. To learn even more about our many higher then usual standards, go to Paths.

WHAT IS THE DIFFERENCE BETWEEN CAGE FREE EGGS AND ORGANIC EGGS?

The big and basic difference is that eggs labeled only as cage free are not fed certified orgnaic feeds (see first question about organic eggs). Not all Cage Free eggs are equal, however. Ours are Certified Humane by Humane Farm Animal Care. To learn why this is important go to certifiedhumane.org.

SOMETIMES THERE ARE BROWN OR RED SPOTS IN THE YOLKS OF RAW EGGS. WHY?

When finding red spots in the yolks of the eggs they have purchased, many people are concerned that such tiny to small red spots indicate that they have gotten a fertilized egg and a chick was being formed before it was packed for sale. This is not the case. Red spots occur naturally through a hen’s laying period, particularly when they are young, you will find them in many of their eggs, no matter who has produced the eggs you have purchased. This is because, as layer hens newly mature bodies get used to producing and laying eggs, minute capillaries are broken during their internal reproductive process and small “dots” of blood form in the yolk before the protective shell envelops the egg. They usually dissipate into the yolk matter the longer time elapses from the moment the egg has been laid to the time it is cracked open. Red spots are harmless and tasteless, and are actually an indication that you have purchased very fresh eggs.

The USDA has released new finding on the nutrient composition of eggs. The results state that a large egg has an average cholestoral rating of 185mg per egg, a 14% decrease from the previous testing!

Vitamin D results have also changed.  The average large egg now has 41 IU of Vitamin D, showing an increase of 64% compared to previous testing.
